My weeknight dinner staple! Minimal prep work involved and you can multi-task (worry-free) while the chickpea mixture cooks in the oven. The mixture of seasonings kick this simple ingredient meal up a notch! Enjoyed by herbivores and omnivores alike (tried, tested and true!) Inspired by the hilariously delicious Thug Kitchen cookbook.
Ingredients (serves 4-6)
- 1 large yellow onion
- 4 cloves minced garlic
- 1 red bell pepper
- 1 large crown broccoli
- 3 cups cooked chickpeas
- 3 tbsp olive oil
- 2 tbsp soy sauce
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp coriander
- 5 large flour tortillas
- 1/2 lime
- spinach to garnish
Directions
- Preheat oven to 425 F
- Chop up onion, garlic, bell pepper and broccoli. Place in bowl with cooked chickpeas.
- Mix soy sauce, olive oil and spices together. Pour over chickpea & vegy mixture. Place mixture on prepared baking sheet (baking sheet covered with parchment paper) and bake for 20 minutes.
- Take out of oven, toss and then bake for another 15 minutes. Squeeze mixture with lime juice when done baking.
- Assemble burrito with chickpea mixture and spinach. Enjoy!
