My weeknight dinner staple! Minimal prep work involved and you can multi-task (worry-free) while the chickpea mixture cooks in the oven. The mixture of seasonings kick this simple ingredient meal up a notch! Enjoyed by herbivores and omnivores alike (tried, tested and true!) Inspired by the hilariously delicious Thug Kitchen cookbook.

Ingredients (serves 4-6)

  • 1 large yellow onion
  • 4 cloves minced garlic
  • 1 red bell pepper
  • 1 large crown broccoli
  • 3 cups cooked chickpeas
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp coriander
  • 5 large flour tortillas
  • 1/2 lime
  • spinach to garnish

Directions

  1. Preheat oven to 425 F
  2. Chop up onion, garlic, bell pepper and broccoli. Place in bowl with cooked chickpeas.
  3. Mix soy sauce, olive oil and spices together. Pour over chickpea & vegy mixture. Place mixture on prepared baking sheet (baking sheet covered with parchment paper) and bake for 20 minutes.
  4. Take out of oven, toss and then bake for another 15 minutes. Squeeze mixture with lime juice when done baking.
  5. Assemble burrito with chickpea mixture and spinach. Enjoy!
