This post was inspired by the big ole tub of hummus in my fridge that was about to expire.

Also, you would think my favourite number is 6, because I keep post recipes on groups of six – smoothies, overnight oats, sandwiches, etc. I can’t say I have a favourite number – do you?

Anyways, back to hummus. What is hummus exactly? Hummus is an incredibly popular Middle Eastern dip and spread.

It is typically made by blending chickpeas (garbanzo beans), tahini (ground sesame seeds), olive oil, lemon juice and garlic in a food processor.

Not only is hummus delicious, but it is also versatile and packed with nutrients – fibre, b-vitamins etc to name a few.

Anyways, without further ado – check out my favourite hummus recipes!

Baked Vegan Feta

Ingredients
  

  • 1 pint cherry tomatoes
  • 2 red pepper sliced
  • 1/2 cup sun-dried tomatoes
  • 2 cups edamame
  • 1 garlic clove chopped
  • 1 block vegan feta
  • 1 tbsp olive oil
  • 8 oz pasta dried
  • 1 tsp oregano
  • 1 tsp dried basil

Instructions
 

  • Preheat the oven to 400F, then in a large baking dish, add in your cherry tomatoes, garlic cloves, edamame, red peppers, sun-dried tomatoes and 1 tsp of olive oil and toss to combine. 
  • Make a well in the center of your baking dish and add in your vegan feta. Top the vegan feta with the dry basil, oregano and the remaining olive oil, then place in the oven to bake for 30-40 minutes or until tomatoes are blistered and juicy. 
  • Meanwhile, cook pasta according to package directions.
  • Once the veggies and hummus are cooked, carefully with a fork mash your tomatoes and garlic to fully release all of their juices, then mix into the hummus to get a thicker sauce. Mix in cooked pasta and enjoy.

Hummus Veggie Sandwich

Ingredients
  

  • 1/2 Cup Hummus
  • 8 Slices Bread of Choice
  • 1 Cup Sprouts
  • 2 Cups Mixed Greens
  • 1 Tomato Sliced
  • 1 Red Onion Sliced
  • 1/2 Cucumber Sliced

Instructions
 

  • Spread hummus on one side of the bread. Arrange all the veggies on sandwich. Enjoy!

Hummus Melts

Ingredients
  

  • 1 english muffin split in half
  • 1/4 cup hummus
  • 1/2 cup vegan cheese
  • 3 grape tomatoes sliced
  • 1/2 red bell pepper sliced
  • red pepper flakes

Instructions
 

  • Preheat oven to 400 degrees.
  • Spread hummus on English muffins and top with vegan cheese, peppers and tomatoes.
  • Bake at 400 degrees for about ten minutes or until the cheese melts. I like to broil for an additional 1-2 minutes to really melt the cheese well. (Note: Add more cheese if you’d like!)
  • Serve by slicing and topping with red pepper flakes.

Tempeh Pinwheels

Ingredients
  

  • 1/4 cup hummus
  • 1 large tortilla
  • 1 tomato finely diced
  • 4-6 strips tempeh bacon

Instructions
 

  • Lay one of the tortillas flat. Using the back of a spoon spread a generous amount of hummus all around the tortilla.
  • Sprinkle with diced tomatoes, chopped tempeh, and lettuce.
  • Roll up nice and tight and using a serrated knife slice into pieces. Serve immediately.

Grape Tomato Bites

Ingredients
  

  • 12 grape tomatoes
  • 1/4 cup hummus
  • 1 green onion chopped

Instructions
 

  • Halve and de-seed the tomatoes. Dry the tomato halves off with a paper towel to remove any excess tomato goopiness.
  • Scoop hummus into each of the tomatoes. Top with diced green onions.

Everything Bagel Cucumber Bites

  • 1 cucumber sliced
  • 1/4 cup hummus
  • Everything Bagel Seasoning

Instructions
 

  • Add hummus onto sliced cucumbers. Top with Everything Bagel Seasoning. Enjoy!
