Some weeks, I’m definitely more of a lazy meal prepper. This week was one of them!
I decided that I wanted to challenge myself to see how many meals I could make with the least ingredients possible – so here you are!
I used a buffet-style meal prep approach (more on that here) to put these meals together.
This week I only used the following in my meals:
- Roasted veggies (zucchini, peppers, onions and mushrooms)
- Tofu
- Rice
- Tortillas
- Condiments (sour cream, salsa, salad dressing)

… that’s it!
These ingredients are super versatile and were made into Buddah Bowls, Skewers and Tacos!

Tofu Buddah Bowl
Ingredients
- 1/4 cup margarine
- 2 tbsp lemon juice
- 2 tsp rosemary leaves chopped
- 1 clove garlic finely chopped
- 1 tsp lemon peel grated
- 1 package tofu extra firm, pressed and cubed
- 3 peppers assorted colours, cut into chunks
- 12 cremini mushrooms
- 1 zucchini cut into rounds
- 1 red onion sliced
- 1.5 cup brown rice
Instructions
- Preheat oven to 400 F.
- Combine margarine, lemon juice, rosemary, garlic and lemon peel in large bowl. Add tofu and vegetables and toss to coat. Cover and marinate in refrigerator at least 1 hour.
- Cook rice on stovetop, in a saucepan, while veggies are roasting.
- When veggies and tofu are done marinating, add to a baking sheet lined with parchment paper. Roast for 12-15 minutes on each side, tossing halfway.
- Assemble bowls with rice as a base, then roasted veggies and tofu. Add dressings as desired – I like sour cream and salsa!

Tofu Skewers
Ingredients
- 1/4 cup margarine
- 2 tbsp lemon juice
- 2 tsp rosemary leaves
- 1 clove garlic chopped
- 1 tsp lemon peel
- 1 package tofu
- 3 peppers
- 12 cremini mushrooms
- 1 zucchini
- 1 red onion sliced
- wooden skewer sticks
Instructions
- Preheat oven to 400 F. Combine margarine, lemon juice, rosemary, garlic and lemon peel in large bowl. Add tofu and vegetables and toss to coat. Cover and marinate in refrigerator at least 1 hour.
- When veggies and tofu are done marinating, add to a baking sheet lined with parchment paper. Roast for 12-15 minutes on each side, tossing halfway.
- Alternately thread tofu and vegetables on 4 skewers. Enjoy!

Tofu Tacos
Ingredients
- 1/4 cup margarine
- 2 tbsp lemon juice
- 2 tsp rosemary leaves
- 1 clove garlic finely chopped
- 1 tsp lemon peel grated
- 1 package tofu
- 3 peppers
- 12 cremini mushrooms
- 1 zucchini cut into rounds
- 1 red onion sliced
- 4-8 medium tortillas
Instructions
- Preheat oven to 400 F.
- Combine margarine, lemon juice, rosemary, garlic and lemon peel in large bowl. Add tofu and vegetables and toss to coat. Cover and marinate in refrigerator at least 1 hour.
- When veggies and tofu are done marinating, add to a baking sheet lined with parchment paper. Roast for 12-15 minutes on each side, tossing halfway.
- Assemble tacos with roasted veggies and tofu. Add dressings as desired – I like sour cream and salsa!
