Summer is such a happy time, especially during this strange time in the world. This summer also seems to be especially HOT so far – so you’re not going to be wanting to spend a lot of time in the kitchen cooking while appliances are heating up the room.
Some weeks, I’m definitely more of a lazy meal prepper. This week was one of them!
I decided that I wanted to challenge myself to see how many meals I could make with the least ingredients possible – so here you are!
I used a buffet-style meal prep approach (more on that here) to put these meals together.
This week I only used the following in my meals:
Do you ever look at a recipe, become intrigued by the photo…but then become totally intimidated by the number of ingredients listed in the recipe? I know I have.
Do you include prunes in your meals or snacks? I didn’t always. I’m here to tell you why you should: especially since November is National Osteoporosis Month.
Okay, so we know that beans are good for your heart (cue that jingle we all know), but how do we incorporate them into our meals, in a fun way?
Gluten as been a hot topic for some time in the recent years. Myself, I have had the discussion around the decision to cut out gluten or not, with many, many people.
While I could write a lengthy discussion on this topic, I think you should first check out this article that I wrote a few years ago. To sum it up, there has been an increase in celiac disease among the population, but we have also developed an increased tendency to rely on self-diagnosis and eliminate gluten from our diets.
