I don’t think I spend enough time with dessert. I mean, don’t get me wrong – I’m far from some super-robot-dietitian who eats nothing but kale, avocados and nuts. I defiantly enjoy a little indulgence once in a while. The thing is, I would rather enjoy an indulgence outside of the home.
This is because:
- My baking skills are sub-par at best
- I only have one serving of dessert when out and can avoid having extras around in the house
- Time
- Time and…
- Time
While I make a solid effort to encourage myself and my clients to cook most of their meals at home, I can’t see making more time for making DESSERTS at home too!
However…I’m about to go against my usual pattern as I rave about this deceptively healthy dessert. I created this a few weekends ago during one of my experimental kitchen sessions (AKA play time). This takes less than 10 minutes to make and provides 14 grams of protein, 9 grams of fibre and is a healthy source of monounsaturated fat. Talk about filling! It’s gluten-free as well, which is a good news for my celiac and IBS clients.
I’ve tried to make avocado puddings before with cocoa powder and they haven’t quite worked out. The secret to this delicious pudding is: real chocolate! I simply melted some chocolate pieces (couverture) in the microwave, in 30 second segments, mixed them with mashed avocado, added a bit of milk and lemon rind…and VOILA! Avocados rich and handsome cousin was born ;).
I love Greek yogurt but for someone who eats Greek yogurt at least once daily, I think it’s about time to switch things up a bit. I recently stumbled across Gay Lea’s Nordica Smooth Cottage Cheese – and I’m a fan! With 10 grams of protein and 15% of your daily calcium needs for each 110 calories serving – it’s a pretty good nutrition deal! I love the yummy and smooth texture. I’ve added it to smoothies and have had it as a mid-afternoon snack with some apples too – it’s delicious!
