Confession – I’ve made this soup for the past 3 weeks. I just can’t get enough! I’ve always gravitated towards pureed soups (let’s be honest – probably since they’re so forgiving and idiot-proof!) however my boyfriend was requesting a heartier, chunky soup. He has a fear of being full…and the pureed soups weren’t cutting it!
Being a vegetarian Registered Dietitian, I had to ensure the soup was not only hearty, but nutritionally balanced and contained an adequate amount of protein. Low and behold – this Hearty Minestrone Soup fit the bill! 23 grams of protein and 11 grams of fibre – yes please! This soup can be kept int he fridge for about 5 days and frozen for about 6 months. Perfect for meal prep Sunday!
Where is the flour in this recipe? Where is all the fibre coming from? Please reply.
