When I talk about nutrition, I encourage the concept of adding over subtracting.

Add whole, real foods and mostly plants to your diet. It’s the preferred mindset when focusing on what you have to add vs take away. There is nothing that you have to completely avoid in your diet! Unless you have an allergy or medical condition of course. Enjoy that classic donut or your moms favourite cheesecake! Just make it a priority to add nutrients.

What are nutrient-dense foods that you can add to your desserts? Nuts and dried fruits! They add a delicious texture and flavour, while packing a ton of nutrition in. Nuts and dried fruits contain zinc, copper, iron, selenium and vitamin B6, which may contribute to the normal function of the immune system. As well, they keep you full and fuelled for the day! This is where these delicious recipes come in – they both are nutrient-rich and super filling, as they are loaded with nuts and dried fruit. Let me know which one you try!

Cashew Cheesecake Bites

  • Servings: 6

Ingredients

  • 1 cup packed pitted dates
  • 1 cup raw pecans
  • 1 1/2 cups raw cashews (quick-soaked – I simply boil hot water and add them to a bowl of cashews for 30 mins)
  • 1 large lemon (juiced)
  • 1/3 cup coconut oil (melted)
  • 2/3 cup full-fat coconut milk
  • 1/2 cup maple syrup
  • Raspberries for topping

Directions

  1. Add dates to a food processor and blend until small bits remain.
  2. Add the pecans and blend. Scoop 1 Tbsp into a oiled muffin tin and press down with the end of a glass.
  3. Next add the rest of the ingredients into the blender to create the filling. Pour into muffin tin. Top with raspberries.
  4. Freeze for 4 hours, minimum. Enjoy!

Chocolate Pistachio Orange Donuts

  • Servings: 6

Ingredients

  • 1 cup packed pitted dates
  • 1/2 cup almond milk
  • 1/2 cup cashew butter
  • 1/2 cup cacao powder (or cocoa powder)
  • 1/2 tsp baking soda
  • 1 tsp peppermint extract
  • 2 cups icing sugar
  • 2 tbsp orange juice
  • 1/2 cup crushed pistachios

Directions

  1. 1. Preheat the oven to 350F.
  2. 2. Blend the dates, almond milk, cashew butter, and peppermint extract.
  3. 3. Transfer to a bowl. Add the cacao powder, salt, and baking soda. Mix.
  4. 4. Spoon or pipe into a donut pan (silicone or lightly oiled so they don’t stick). You will get about 6 full size donuts or 10 minis.
  5. 5. Bake for 15-17 minutes at 350F. Place on cooling rack for 30 mins. When the donuts have cooled, make the glaze by mixing together the icing sugar and the orange juice. Spread on top of the donuts and sprinkle the crushed pistachios on top.
