- 1 onion (diced)
- 1 zucchini (thinly sliced)
- 8 eggs
- 1/4 cup milk
- 1 sweet red pepper (thinly sliced)
- 3/4 cup feta cheese
- 3/4 cup sun dried tomatoes

Directions:
- In large nonstick ovenproof skillet, heat oil over medium heat; cook onion and zucchini stirring often, for 5 to 8 minutes or until softened.

Meanwhile, in large bowl, whisk together eggs, milk, pepper; stir in red pepper
- Combine vegetables with egg mixture in an oven-safe dish. Sprinkle with feta cheese and sun dried tomato
- Bake in oven at 375 F for 20-22 minutes, or until edges are brown
