    Ingredients (5 Servings):

    • 1 tbsp olive oil
    • 1 onion (diced)
    • 1 zucchini (thinly sliced)
    • 8 eggs
    • 1/4 cup milk
    • 1 sweet red pepper (thinly sliced)
    • 3/4 cup feta cheese
    • 3/4 cup sun dried tomatoes
    • pepper

    Directions:

    1. In large nonstick ovenproof skillet, heat oil over medium heat; cook onion and zucchini stirring often, for 5 to 8 minutes or until softened.
    2. Meanwhile, in large bowl, whisk together eggs, milk, pepper; stir in red pepper
    3. Combine vegetables with egg mixture in an oven-safe dish. Sprinkle with feta cheese and sun dried tomato
    4. Bake in oven at 375 F for 20-22 minutes, or until edges are brown
