I’ve been home for this extended holiday weekend and re-discovered my Air Fryer! Admittedly, I have had mine for almost a year now, but never truly put it to the test. Today I cooked a couple of snack items – all of which were tasty, affordable and quick.

If you have never tried out an Air Fryer, now is the time. One of the most notable things about it (besides being super quick) is the texture that it provides. I am super impressed with how the roasted chickpeas and vegetable chips turned out – far crisper than putting them in the oven.

Air Fryer Roasted Herb Chickpeas

  • Servings: 4
  • Difficulty: Easy

Ingredients

  •  15 oz chickpeas, cooked
  •  1 tbsp avocado oil
  • 1 tsp onion powder
  • 1 tsp paprika
  • 2 tsp dried oregano

Directions

  1. Heat air fryer to 390°F.
  2. Drain and rinse canned chickpeas. Toss with avocado oil and spices in a large bowl.
  3. Dump the whole batch of chickpeas in the air fryer basket. Cook for 12 minutes, shaking a couple of times. Remove from air fryer and enjoy!

Air Fryer Roasted Veggie Chips

  • Servings: 4
  • Difficulty: Easy

Ingredients

  •  1 medium zucchini
  •  1 sweet potato
  • 1 carrot
  • 1 tsp avocado oil
  • 1 tsp onion powder
  • 2 tsp oregano

Directions

  1. Using a knife or a mandolin, thinly slice the zucchini, sweet potato, and carrot into 1/4-inch-thick rounds.
  2. Place the veggie slices in a medium bowl and drizzle with avocado oil, seasonings and toss to coat.
  3. Set the air fryer to 360°F and place the veggies slices in the fryer basket in a single layer. Fry for about 15 minutes, flipping over halfway through. Enjoy!
