What a great low carb, low calorie, gluten free, vegetarian dish! It can also be used as a pizza alternative – try this out for a late night snack after the pub!


Ingredients – makes 6 servings

  • 1 lb swiss chard
  • 4 garlic cloves, minced
  • 1 cup chopped onion
  • 2 teaspoons olive oil
  • 6 egg whites
  • 2 whole eggs
  • 3 tablespoons chopped fresh basil or thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium Tomato, sliced

Instructions

  1. Preheat the oven to 350 degrees.
  2. Wash and chop the chard
  3. In a skillet, sauté the garlic and onions in 1 tablespoon of the oil for about 5 minutes.
  4.  Add the chard leaves and season lightly with a pinch of pepper and sauté until wilted
  5. Whisk eggs together.  Stir in the chard mixture and blend well.
  6. Put the egg-chard mixture back in the pan and place in the oven for about 30 minutes until puffed and golden.
