What a great low carb, low calorie, gluten free, vegetarian dish! It can also be used as a pizza alternative – try this out for a late night snack after the pub!
Ingredients – makes 6 servings
- 1 lb swiss chard
- 4 garlic cloves, minced
- 1 cup chopped onion
- 2 teaspoons olive oil
- 6 egg whites
- 2 whole eggs
- 3 tablespoons chopped fresh basil or thyme
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 medium Tomato, sliced
Instructions
- Preheat the oven to 350 degrees.
- Wash and chop the chard
- In a skillet, sauté the garlic and onions in 1 tablespoon of the oil for about 5 minutes.
- Add the chard leaves and season lightly with a pinch of pepper and sauté until wilted
- Whisk eggs together. Stir in the chard mixture and blend well.
- Put the egg-chard mixture back in the pan and place in the oven for about 30 minutes until puffed and golden.
