Summer is such a happy time, especially during this strange time in the world. This summer also seems to be especially HOT so far – so you’re not going to be wanting to spend a lot of time in the kitchen cooking while appliances are heating up the room.
The warmer weather is re-introducing me to my love for sandwiches! Also, who says that sandwiches can’t fit into a healthy diet? They certainly can! Pack them with veggies, healthy fats and protein and you have yourself a balanced meal!
Who has time to make a hearty and balanced breakfast in the morning on a busy workday? If we’re motivated, we may set 15-20 minutes aside to make a nice veggie omelette or some fruit pancakes topped with almonds and maple syrup. How about the times we need to rush out the door? Here is your answer!
I was HANGRY.
I was in a hangry hurry to make a meal when I got home after work today and wanted a good meal ASAP.  I wanted to also make something that I could bring to work for lunch and maybe have some extra to freeze. What did I come up with? These simple tortilla pizzas.
This combination is fantastic! On a whole wheat greek pita, I used a creamy sweet potato base  instead of tomato sauce and topped it off with some caramelized onion, kale and mozzarella cheese! A very inexpensive, quick and healthy vegetarian recipe! If you’re cooking for one person, make four at a time and use it for lunches that week or freeze for later.
