Do you ever get inspired to make your favourite restaurant meals at home? I have been especially inspired lately, because we have not really been eating out since this pandemic started (with the exception of 2 times).
One of my favourite restaurants to go to is Freshii – and our local one has recently closed down for a few months, unfortunately! Therefore, more than ever I’ve been inspired to create healthy restaurant meals. Check out my two favourite Freshii recipes that I’ve recreated for you!
Teriyaki Tofu Bowl

A balanced, delicious and nutritious bowl.
Ingredients
- 2 cups cooked brown rice
- 2 cups broccoli florets cut small
- 1 cup shredded carrots
- 1 cup shelled edamame boiled for 3 or 4 minutes
- sesame seeds for topping
- 1 tbsp olive oil
- 1/2 350 gm block of extra-firm tofu drained and cut into ½-inch cubes
- 1 tbsp light soy sauce
- 3 cloves garlic
- teriyaki sauce
Directions
- Heat olive oil over medium heat and add tofu. Saute for 5 minutes. Drizzle soy sauce over tofu and stir. Cook for 5 minutes, stirring occasionally, until tofu is browned and firm.
- Divide rice, broccoli, carrots and edamame between two serving bowls. Top with sesame seeds and tofu. Drizzle with teriyaki sauce. Serve and enjoy!
'Metaboost' Salad Wrap

A fresh, tasty wrap combination that is made from a delicious salad.
Ingredients
- 1 cup shredded carrots
- 1 cup spinach
- 1 tbsp light soy sauce
- 1 cup shelled edamame boiled for 3 or 4 minutes
- 1/2 350 gm block of extra-firm tofu drained and cut into ½-inch cubes
- 1/2 cup mango, chopped
- balsamic dressing
- goat cheese for topping – optional
- 2 large wraps
Directions
- Combine all ingredients in a bowl. Divide into two bowls.
- Consume in wrap or as a salad. Top with balsamic dressing and goat cheese (optional).
