Mothers day has just passed. It was a different kind of Mothers Day, that is for sure, but I hope the mothers in your life got all of the love that they deserve.
This post was developed in collaboration with California Strawberries. California strawberries are perfect for baking!
We dropped off the above dessert (Strawberry Pistachio Cream Tarts) for my mother in law on Sunday – while still following social distancing rules. You can grab it here!
Speaking of mom…
We used to pick strawberries at my grandparents house when I was younger. I always looked forward to strawberry season. Right now, my local strawberries are ‘off-season’ so I’ve been enjoying delicious California Strawberries, which are currently in peak season and readily available right now! You can find organic and conventionally-grown strawberries from California at grocery and natural products stores. I have California strawberries most often as a topper to my oats in the morning. I usually add in 8, as a topping, which is one serving and only provides 50 calories and as much Vitamin C as an orange!
I wanted to shed light on a recipe that can be used to preserve the delicious flavour of California strawberries beyond peak season. That is my favourite Strawberry Chia Seed Jam – used in overnight oats! Note that there are no added preservatives in this recipe. If you do the full hot water bath canning process, the spread is safe to store at room temperature. However if you chose to skip the canning process, store in the fridge and use within 2-3 weeks. You can also freeze the jam for several months and thaw in the fridge before using.
