Black Bean-Roasted Zucchini-Goat Cheese Enchiladas

The texture of these little numbers is fantastic and creamy! I found them very filling too – two of them made for a pretty satisfying and complete vegetarian meal. They are a bit heavier on the prep work, but making 10 at a time allowed me to freeze and pack away 8 for future lunches/dinners! An easy 4 extra meals.  To save time, you can  prep the sauce and/or filling ahead of time for a quick meal. Using store-bought enchilada sauce would also abbreviate the prep, although you would sacrifice the taste!

Experimenting with Herbs and Spices

This was a meal made during one of cooking classes for individuals living with cancer. The focus of the class had to do with experimenting with different herbs and spices to help cope with taste changes and food aversions that may happen during cancer/treatment. Some new flavours that were introduced to the class included cilantro, rosemary and ginger. It’s amazing the flavour dimensions that herbs and spices can add to your cooking, without necessarily adding a lot of calories. Enjoy the recipes below!

Vegetarian Lentil Shepherd’s Pie

Although this recipe is a tad laboursome, it’s a great recipe that can supply you with meals for a number of days! With the yield provided below, I was able to make two casserole dishes of this pie and froze one. I’m cooking for one and this supplied me with lunches for two weeks! I’m probably the odd exception in that I can eat the same lunch for two weeks without getting tired of the meal, but for a family this would be great for a couple of days of meals! I also had friends taste test it and they could not believe it was a vegetarian dish…so go ahead and fool the carnivores in your life with this protein-rich dish!
