If you follow my page, you will know that I’m a huge fan of oats. I typically make overnight oats but this week I put together Baked Oats with inspiration from the viral TikTok Trend!
I can understand this popularity of this trend though – it’s super easy to make and frankly tastes too good to be considered a breakfast! I’m also willing to bet that too have all of the ingredients on hand already.
I’ve seen most of these recipes contain egg, so I wanted to develop and egg-free version for you! However, if you wanted to use eggs, simple sub one egg in for the milk.

The first step is simple- blend the oats, banana, milk, maple syrup, baking powder and cinnamon in a food processor or a blender.

Next, you add add the mixture to a ramekin, top with chia jam/other jam (chia is my preference – check out this recipe here) and bake for 20-25 minutes!


Pumpkin Pie Baked Oatmeal
Ingredients
- 1 cup plant milk
- 2 cups oats
- 1/4 cup protein powder
- 2 cups puree pumpkin
- 3 tbsp maple syrup
- 2 flax egg
- 1 tsp vanilla extract
- 1 tsp cinnamon
Instructions
- Preheat the oven to 350°F and grease a 9×9” baking dish.
- In a large bowl, whisk the flax eggs, milk, pumpkin, maple syrup and vanilla extract. Add the oats, cinnamon, and protein powder. Top with pumpkin seeds, if desired. Stir ingredients until evenly combined. Pour mixture into the baking dish and bake in the preheated oven for 30 to 35 minutes.
- Allow to cool for several minutes then serve warm with a splash of milk or yogurt and enjoy!
