Ingredients
  

  • 1 Tbsp Avocado Oil
  • 1/2 Red Onion Diced
  • 8 Oz Pourable JUST Egg
  • 1/2 Cup Black Beans Cooked
  • 6 Mini Tortillas
  • Salsa
  • Sour Cream (vegan if needed)

Instructions
 

  • Heat up the avocado oil on a pan over medium heat.
  • Add the diced onion and saute until brown. Add the JUST Egg Liquid and scramble until cooked through. Add black beans and cook for 1-2 more minutes, until incorporated into mixture.
  • Arrange egg and bean mixture in mini tortillas and serve with sour cream and salsa!
