1/2cupBaby Spinachthinly sliced
1Green Onionthinly sliced
1/2Red Bell Peppermedium, diced
1/4cupCoconut Yogurt

Instructions
Preheat the oven to 425 F and line a baking sheet with parchment paper.
In a bowl, toss the sweet potato wedges with the oil and taco seasoning. Place on baking sheet and space out the pieces evenly being sure not to crowd the pan. Bake for 25 to30 minutes, flipping halfway through.
Transfer the sweet potato fries onto a plate and top with the baby spinach, red bell pepper and coconut yogurt. Enjoy!
