Roasted Butternut Squash, Cauliflower & Apple Soup

Ingredients
  

  • 4 cups Butternut Squash peeled and cubed
  • 2 cups Cauliflower
  • 1 Apple peeled & cored
  • 1 Onion peeled & chopped
  • 3 tbsp Avocado Oil
  • 2 tbsp Maple Syrup chopped
  • 1 tsp Cinnamon
  • 3 cups Veggie Broth

Instructions
 

  • Preheat the oven to 425 F.
  • Add the chopped veggies and the apple to a parchment paper-lined pan and add oil, maple syrup and cinnamon. Roast for 25-30 minutes at 425 F, tossing halfway.
  • Add roasted veggies to a blender with 3 cups of veggie broth. Enjoy!
