Why did I use sweet potatoes in these recipes? Sweet potatoes are a versatile vegetable that can be incorporated into many dishes, and American sweet potatoes bring healthy nutrients and flavour to meals. Due to a shorter growing season, there is a very limited supply of sweet potatoes grown in Canada. As a result, American sweet potatoes are more readily available and Canadians can find them year-round in their local grocery store.

Nutritionally, one sweet potato has 694 mg of potassium, almost double what a banana has! Also, one medium sweet potato provides 37% of your daily value of Vitamin C and is also a great source of Vitamin A.

Mexican-Style Fries Supreme

Ingredients
  

  • 2 American Sweet Potatoes cut into ¼ to ½-inch thick wedges
  • 1 tbsp Avocado Oil
  • 2 tsp Taco Seasoning
  • 1/2 cup Baby Spinach thinly sliced
  • 1 Green Onion thinly sliced
  • 1/2 Red Bell Pepper medium, diced
  • 1/4 cup Coconut Yogurt
  • 1 Jalapeno

Instructions
 

  • Preheat the oven to 425 F and line a baking sheet with parchment paper.
  • In a bowl, toss the sweet potato wedges with the oil and taco seasoning. Place on baking sheet and space out the pieces evenly being sure not to crowd the pan. Bake for 25 to30 minutes, flipping halfway through.
  • Transfer the sweet potato fries onto a plate and top with the baby spinach, red bell pepper and coconut yogurt. Enjoy!

Sweet Potato Burger

Ingredients
  

  • 2 cups Mashed American Sweet Potatoes cooked
  • 1 tbsp Avocado Oil
  • 1 cup Quinoa cooked
  • 1 cup Black Beans cooked
  • 1/2 cup Green Onions diced
  • 1/2 cup Almond Meal
  • 2 tsp Taco Seasoning

Instructions
 

  • Preheat oven to 400 F and cut sweet potatoes in half. Rub with avocado oil and place facedown on a parchment paper lined baking sheet. Bake sweet potatoes for about 30minutes. Place aside.
  • Add black beans to a mixing bowl and mash. Add in cooked quinoa, green onion, almond meal and taco seasoning. Scoop in the fresh of the cooked sweet potato.
  • Form burger patties with your hands and place on a parchment lined baking sheet. Bake burgers for 30-45 minutes, flipping halfway. Serve on your favourite bun with your favourite toppings!

Sweet Potato Taco Bowl

Ingredients
  

  • 2-3 American Sweet Potatoes peeled and ¼-inch cubed
  • 1 tbsp Avocado Oil
  • 2 tsp Taco Seasoning
  • 4 cups Kale finely chopped
  • 1 cup Black Beans
  • 1/2 cup Corn
  • 1 cup Quinoa cooked
  • 1 cup Cherry Tomatoes diced
  • 1-2 Limes sliced
  • Salsa
  • Vegan Sour Cream

Instructions
 

  • Preheat oven to 425 F. On a large baking sheet, toss sweet potatoes with 1-2 tsp of oil and taco seasoning. Roast until tender, tossing halfway through, for 25-30 minutes.
  • Once cooked, assemble bowls with cooked American sweet potato cubes, chopped kale, black beans, corn, quinoa, and cherry tomatoes. Serve with salsa and vegan sourcream, along with sliced limes.
