I’ve come to accept that (for the most part) ain’t nobody got time to make eggs in the morning. What other high protein breakfast options are there? Greek yogurt…this is great but it can get old. Okay…chia seed pudding? Also great but unless it’s smothered in nuts, it’s not really too high in protein. Eggs? Oh wait, we’re too busy for eggs.
How about…muffins? YES

I haven’t tried to make them vegan, but you could substitute the eggs for a flax egg (how to here – http://minimalistbaker.com/how-to-make-a-flax-egg/) and try coconut or soy yogurt in place of the Greek yogurt!
Hi Nicole, I just made these muffins and they are very tasty.
Are they supposed to be wet in the centre, I find they fall apart trying to remove the paper liner.
I had them calculated on weight watchers smart points and they are 2 Smart points each which makes them a great treat from Tim Horton’s

They are supposed to be a bit wet in the centre – make sure you keep them in the fridge! Also try spraying the paper lining with cooking oil before baking them. I’m glad you like the taste!
